Potatoes, Vegetables & Sides
4 slices Bacon
2 oz Slivered almonds
1/2 Onion, medium
1 lb French style green beans
1 cup Chicken stock
1/2 tsp Salt
1/4 tsp Pepper
1/2 tsp Tarragon

Chop bacon into small pieces and fry over medium heat until done but not crisp.
Dice onion into small pieces.
Remove bacon from grease and add diced onions. Saute in the bacon grease until tender; add a little olive oil if amount of bacon grease is too small.
Remove the onions from the grease/oil and add the sliced almonds. Saute over medium heat while stirring until just browned, perhaps 2+ minutes.
Mix chicken stock.
Add green beans to 2-quart sauce pan. Add chicken stock. Boil gently for 5-10 minutes, or until tender. Alternatively, steam for about 5 minutes or until tender using plain water. Drain, and season with salt & pepper.
Add the bacon, almonds, onion, and tarragon to the seasoned green beans and mix.
Quantities approximate. Adjust as needed next time recipe is used.
